Banana Cream Scones with Cinnamon Sugar Topping
Ingredients:
Scones
- 2 3/4 cup flour
- 1 dash salt
- 1/4 cup sugar
- 2 tsp cinnamon
- 1/2 cup butter (we actually used a lower-fat margarine, because that's more common here.)
- 2/3 cup half and half (milk works too!)
- 2 bananas, mashed (if you want to really reduce the butter, add another banana and you could get away with 1/4 to 1/3 cup butter)
Topping (optional)
- 1/2 to 1 cup sugar
- 1 to 2 T cinnamon
- 2 T butter, melted
Preheat oven to 375 F. Combine all dry ingredients in a medium sized bowl. Cut the butter in until the mixture resembles dry crumbs. In another, larger bowl, combine the mashed bananas and the cream and mix well. Add dry ingredients to wet, mix until just combined. Roll out, cut into desired shapes, and place on baking sheet. If you want the topping, now drizzle your melted butter on top of each scone, and then sprinkle the scones with a mixture of the sugar and cinnamon. Bake for about 15 minutes, or until a toothpick comes out clean and the bottoms of the scones are golden brown.
These are sooo yummy!!! We did some with and some without the topping, and next time, I want to play around with the recipe a little bit to see if I can really "healthify" it!!! :D
In other news, I received an email about an article on another blog that talks about the possible health benefits of chocolate! If you want, check it out here! There's also a really cool article on running, so check that out too!! :D
Well, I should probably head out....hope you all have a wonderful day!!!!!!! Do you enjoy "healthifying" recipes???? Personally, I'm trying to make myself step out of my comfort zone food-wise more often, because I am recovering from an eating disorder, and don't want to fall back into that. However, if there's something that I really, really love, but wouldn't be good fuel for every day, I try to tweak the recipe to make it more nourishing!!!
This sounds so good! I love scones. I try to balance baking decadent treats with healthier ones. I freeze them so that I always have one or the other on hand depending on what I'm craving! Plus I love having healthy baked goods that I can eat for breakfast and it feels like dessert.
ReplyDeletei miss scones. This would be perfect with some tea. I'll have to see if I can make it GF.
ReplyDelete;)
I have issues with bananas and only like eating bananas by themselves...but this looks soooo good!!!
ReplyDeleteWhenever possible I try to healthify recipes...every little change adds up!
ReplyDeleteoh heck yah! One bowl anything (or two bowls max) is my limit when baking :) These sound so yum. Scones are awesome. The density=perfection
ReplyDeleteWhat a lovely recipe. Your scones look delicious. I'm new to your blog and have spent some time browsing through your earlier entries. I'm so glad I did. I've really enjoyed the time I've spent here and I'll definitely be back. I hope you have a great day. Blessings...Mary
