Fun Weekend and Happy Halloween!

Hey everyone!!!! How was your weekend?? Mine was really awesome!!! We had some great family time, ate a lot of REALLY awesome food and just relaxed a little bit!! The past couple of weekends have been fun, but pretty busy, so we made a point of kicking back a little bit this weekend. Saturday we went to this awesome restaurant where there was all-you-can eat salad and seafood, different cuts of steak were brought straight off of the grill to our table, and we could special order certain cuts of meat, chicken or fish filets. It was sooo yummy!!! I definitely filled up on the salad and seafood buffet, and special ordered some fish!!! I loove seafood, and so does my dad, but we don't eat it very often, so we both definitely took advantage of all the seafood!!! :D So yummy!!!! The steak was good, too! Pretty sure everyone was stuffed after we left the restaurant!

So, besides that, we basically hung out and watched some movies!!! What did you do this weekend????

Anyone have any plans for today??? I don't think that we do.....Halloween isn't really a huuuge deal here. 

Anyway, I have a perfect fall/halloween recipe to share with ya'll!!! Caramel apple muffins! 

Caramel Apple Muffins

Ingredients:
  • 3 medium apples, peeled, cored and diced
  • 1 T butter
  • 1 T granulated sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 2/3 cup brown sugar
  • 2 eggs
  • 2 T buttermilk
  • 1/2 t vanilla extract
Directions:
  1. Place the diced apples, the 1 T butter and the 1 T sugar in a skillet and saute until golden and caramelized, about 5 minutes. 
  2. Combine the flour, baking powder and salt in a small bowl and set aside. 
  3. Combine the butter and sugar and mix until creamy. 
  4. Add in each egg one at a time, stirring after each one until fully incorporated.
  5. Stir in the buttermilk and the vanilla extract, mix until all the wet ingredients are combined. Add the dry ingredients to the wet. 
  6. Once everything is mixed in, stir in the caramelized apples, mixing only until they are well distributed. 
  7. Spoon batter into 10-12 greased muffin tins and bake at 350 for 20-25 minutes or until a toothpick comes out clean. 
  8. Serve with butter or with a powdered sugar glaze.

Spinning and Guests

Hey!! How is everyone doing this week?? Can ya'll believe that it is Thursday? I can't! This week has definitely flown by for me! Yesterday, a new RPM class was released, and because of that, I got to invite my dad to come and take the class with me!! It was pretty fun and I loved getting to show someone in my family what I love to do!! :D
It is officially starting to heat up here.....Brazilian summer is on its way! The way things are going now, I'm pretty sure that this year is going to be a scorcher. The thing about living here is that, even if the temperature itself is only in the mid-90's, it feels so much warmer because we're about 6 degrees south of the equator. The sun basically feels like its sitting on top of your head. Not that I mind too much.....personally, I'd take too hot weather over too cold weather any day. Do you prefer warm or cold weather? 


So last night, we had some guests over. We have a friend, also a missionary, who lives here in the apartment and who is about to head home. So, he invited some friends from his mission agency over for dinner. We had taco night! The only glitch was, we couldn't find soft tortillas anywhere...so we had to make some. I got the recipe online somewhere, but can't seen to find it, so here it is:

Flour Tortillas (makes 8-10 tortillas)


Ingredients:

  • 2 cups flour
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons oil
  • 3/4 cup warm water
Directions:
  1. In a medium sized bowl, combine flour, salt and baking powder. 
  2. Add the oil and mix in a little bit, until the dry ingredients start to look crumbly. 
  3. Gradually add in the warm water. Knead with your hands until the dough is fully combined and smooth. 
  4. Let rest for about 20 minutes. Divide dough up into 8-10 balls. 
  5. On a floured surface, roll out each section of dough until very thin (this is the hardest part...the dough is pretty elastic), and cook on a warm cast iron skillet. Each side should take about 1 minute. 
So there ya have it....homemade tortillas! We ended up making 15 and only had 2.5 left over, so I'd say that they were a hit! :D 

Oh and just to add one more random tanget to today's post, thanks to yesterday's Tuesday Things post by Jessica , I am now addicted to the 7 little words app on my itouch! Hahaha

Cinnabon Scones

Morning!!! I figured that since I didn't post much last week, I'd make up for it this week!!!! First off, thanks so much for all of your kind words about my mile time!!!! You guys are awesome! :D

Now, to start off today's post, I'm going to share , a yummy recipe like I promised yesterday!!! They are scones, but not my usual lemon cream scone recipe, so I was a bit nervous about trying them out. Whenever I do make my lemon scones next I'll do a vlog, like Tara asked a few weeks back! :D Anyway, I saw this recipe online and thought I'd try it out! Here ya' go:

Cinnabon Scones (from this recipe)
Makes 8 scones




Ingredients:

  • 2 1/4 cup flour
  • 1/4 cup packed brown sugar
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1 tablespoon cinnamon (we like cinnamon! :P)
  • 1/4 teaspoon salt
  • 1/2 cup butter, cubed
  • 2/3 cup milk
  • 1 egg
  • 1 teaspoon vanilla
Directions:
  1. In a large bowl, combine flour, sugars, baking powder, cinnamon and salt. 
  2. Cut in the butter until the mixture looks like dry crumbs.
  3. Stir in the milk, egg, and vanilla until everything is fully combined. The dough will be pretty wet, so if you want, add another couple of tablespoons of flour. You don't want this dough to resemble a typical biscuit/scone dough, though, it should still be fairly wet when it goes into the oven. 
  4. Place dough on a cookie sheet w/ parchment paper on it. You can sprinkle some flour on the paper if you want to. Pat out into a disc about 8 inches in diameter. 
  5. Bake at 400 for about 20 minutes or until done. Take out, cut into 8 wedges. To make the scones really taste like cinnamon rolls, serve with a powdered sugar glaze on top. 
So these were pretty tasty!!!!! I was a little nervous about the dough when it went into the oven because it looked nothing like any other scone dough that I had worked with before!!!! I think the cream that I usually use in my scones is what keeps the end result from being too dry and crumbly, so maybe the amount of milk used in this recipe did the same thing.

This week is pretty busy school-wise.....a couple of big tests coming up. I can't believe that I really have just over a year and a half left of high school!!!!! Amazing!!!! I'm really going to start looking in to colleges soon!

Weekend Recap and Running Fun

Morning everyone!!! I was a little MIA for most of last week, but I'm pretty sure that I'll be back to my normal blogging schedule this week!

This weekend was pretty fun! Saturday was a little bit more relaxed, and yesterday was kind of crazy! How , was your weekend?

My mom and I have a deal that once I've hit my goal weight, she'll run a lap with me at the park close to our apartment. So, on Saturday my mom wanted to see how far she could run to practice for our lap together. I went with her and took it as an opportunity to time my mile, which is something that I've been meaning to do for a while now. Even though there is currently no way that I could keep that pace up for very long, I'm pretty proud of my time.  6 minutes, 45 seconds!!!! Average compared to a lot of you speedy people, but I'm proud, especially since I only really started to get into running this year. :D

In other news, Wednesday is another RPM release, and I've talked my dad in to going with me! He said, and I quote: "If you don't think it'll kill me, I'm in.". So I told him that no, RPM would probably not kill him or anything, and that he'd enjoy it. I'm pretty sure that spin is the only sort of fitness class that he would ever take, so I'm pretty excited that he'll come with me! :D

So yesterday, we were out of the house for most of the afternoon. There was a special service in the community church that we went to. It was awesome!!! My dad and everyone else in the ministry has been working on this for a while now, so it was great to see all of their hard work pay off!!!! Afterwards, my dad had to haul all the sound equipment back to the office, and then we headed to Burger King with some friends. I definitely freaked, not because of the food, but because it was like 10:30 and apparently I'm 60 years old on the inside and greatly dislike staying up late. Buuut, it was fun, and when we all got home, we were tired! My dad especially, since he had worked harder than any of us yesterday! I should have a great recipe up tomorrow....stay tuned! :D And try this workout out!!!!! It is my favorite type of workout since it combines cardio with strength!!!!! Aaaand it definitely kicked my butt!!! Has anyone tried out any new tough workouts recently?????? If so, share please!

Easy Dessert and Random Thoughts

Heey everyone!!! How has your week gone so far? Mine has been pretty good! Mostly school, but I did get to go to spin for the first time in a couple of weeks yesterday and absolutely loved it!!!! :D In other workout news, I want to share with ya'll my most recent running playlist....its pretty eclectic which I love!

Fun stuff!!! :D

Now, I just want to share a quick recipe for a delicious mango mousse!! You can sub any other fruit you want, but our favorite is mango! It's really more of an ice creamy/ custard-y texture, and its no bake!

Quick Mango Mousse




Ingredients:

  • Juice from two mangoes (we have a strainer attachment for our blender which we use to juice them)
  • 1 can of sweetened condensed milk
  • 1 can of heavy cream (use the can of condensed milk to measure the cream as well)
Directions:
  1. Pour juice, condensed milk, and cream into a blender.
  2. Blend on high speed for three minutes and pour everything into a large, freezer-safe bowl. 
  3. Place bowl in freezer for about 1 1/2 hours. Take the bowl out and stir up the mousse so that it will freeze more evenly.
  4. Out the bowl back in the freezer for another 1 1/2 hours or until completely frozen. 
Seriously, if you like mango, you'll like this dessert!!!! :D Heck, I don't even really love mango, but I love this! hahaha 

So, before I go, I have another Larabar review for ya'll, courtesy of my sister!!! She tried out the chocolate chip cookie dough flavor that I was sent (I had some as well! :P). 

She said that she thought the chocolate was well distributed in this bar, and really tasted good when heated. However, she also thought that it didn't have much of a "cookie dough" flavor and was really more like a regular chocolate chip bar. So, while she enjoyed the bar itself, she said that it didn't quite have the flavor that she had pictured that it would have.

Another Holiday


Hey!!!! I took yesterday off of blogging because it was yet another holiday here!!!! I actually have no idea what holiday it was, but I was happy to have some more time with my family!

Quick weekend recap: Saturday we did virtually nothing, which was nice. Sunday, we left early for a children's day party in the community, went to the baby shower in the afternoon, and had taco night at a friend's house later on that evening. We were all pretty tired when we got home and glad that yesterday was a holiday so that we could sleep in a little bit.

Over the weekend I came across a very interesting article. A model, in order to demonstrate just how wrong and impossible Barbie's body is, was photographed with outlines where she would need to have surgery in order to achieve Barbie's proportions. Here's the article:

We know that Barbie’s body is anatomically impossible. So why are we still trying for it?
Every day a new plastic surgery promise emerges: scooped-out backs, rear-end lifts, sculpted kneecaps. If it’s possible, it’s suddenly necessary.
But what exactly would you have to go through to get the 'perfect' Barbie body? In the latest issue of O Magazine, model Katie Halchishick becomes the human diagram. Posing for photographer Matthew Rolston, her glamorous, Marilyn Monroe-type features are surgically outlined according to Barbie's proportions.
Here’s a breakdown of what she'd need done to be the kind of doll women aspire to: a brow lift, a jaw line shave, rhinoplasty, a cheek and neck reduction, a chin implant, scooped-out shoulders, a breast lift, liposuction on her arms, and tummy tuck, which would also have to be sculpted as if it were lined in whale-bone from the inside. And that’s just the half of her.
Halchishick doesn’t actually need or want any of these procedures. She’s proving a point: just because our distorted image of how a body should be is medically attainable, that doesn’t mean it should be attained.
And if you doubt that anyone actually wants to look like Barbie, meet Cindy Jackson, a 55-year-old woman who’s had 52 cosmetic surgeries to look like her plastic idol."This is the way I should look,” Jackson told Good Morning America. "It's evolution. It's medical progress." There's also 10-in-one-day record-holder Heidi Montag, and a revolving door of on-screen personalities who look more like each other and less like human beings by the day.
Not everyone would call that progress. “The number one wish for all teenage girls is to be thinner,” said Halchishick, a former Ford Model who now mentors high school students about body image issues. “They think what makes a girl beautiful is skinny with big boobs, perfect hair, perfect make-up.”
Last year a total of 13.1 million body parts were surgically altered. Five percent of patients were under the age of 20.
Halchishick, who co-founded the website Healthy is the New Skinny, doesn’t place all the blame on surgery or a pint-sized rubber and plastic doll. She believes change has to start in schools, as well as in the fashion industry. “Girls want to know how to lose weight so badly, and the schools don’t want to talk about it, because they’re worried they’ll develop a complex,” she told The Gloss in March.
“There need to be models to show [girls] to wish for more.” She now heads up her own modeling agency for women with natural figures. She’s also campaigned to get plus-sized designers into New York Fashion Week. But her spread in O magazine, the first nude pictorial they’ve ever featured, has been the most buzz-worthy.
Accompanied by an essay by writer Amy Bloom, the photograph is intended to make women rethink their body image ideals. But it hasn't had that effect on everyone. When one 15-year-old girl saw this photo of Halchishick, her first thought was of her own imperfection, according to a blogger for Healthy is the New Skinny. “I thought if a girl as pretty as that has to change so much to be perfect, it made me wonder how much more I’d have to change.

Besides that, I baked this morning!!! I made these banana crumb muffins again. The difference is that this time, I made some of the brown sugar glaze that Jessica has been talking about! So, so delicious!!! I did have to make a change because we didn't actually have any heavy cream, and I halved the recipe, so here's what I did:

Brown Sugar Glaze
Ingredients:
  • 1/4 cup brown sugar, packed
  • 1/8 cup granulated sugar
  • 1/8 cup milk
  • 1/2 teaspoon vanilla
  • a little butter (maybe 1/4 to 1/2 teaspoon?) 
Directions:
  1. Combine everything in a saucepan. 
  2. Simmer over medium-low heat until all of the sugar has dissolved. 

The butter was to make up for the fat that would have been in the cream if I had been able to use it. I would definitely make the glaze again!!!! Soooo awesome, especially if you love brown sugar as much as I do! :D

Weekend Plans

Hey! How has everyone's week gone? Mine has been ok...not a whole lot to do, but fun nonetheless. Wednesday was a holiday, so it was a lot of fun to hang out here at home with my family all day! It definitely made school on Thursday seem harder though.....I felt like it was already the weekend!

Speaking of the weekend, mine is going to be pretty busy! One of the ladies who works with us in the ministry is having a baby shower on Sunday!!!! 
In this pic, she's the one in the striped dress! She and her husband (green shirt) already have a 9 year old son. She's due in November, and we're all so happy for her!!!! :D 

Sorry about the lack of recipes this week......we haven't really made anything different than we normally do....I will have another Larabar review up soon though, I think! 

Anyway, I haven't talked about my weight-gain much recently, so I just wanted to update ya'll on my most recent progress! When I first began trying to gain weight, I had about 20 pounds to go. I'm SO happy to say that as of yesterday, I have only 5 pounds left!!! Once I reach my goal, I plan to not weigh myself very often, and just go by how I feel and how my clothes feel. Weighing myself was necessary at first because I was so underweight, but now that I'm in a healthier range, I don't want to get obsessed with a number on a scale. That's not good for anyone. Do you weigh yourself often, or do you go by how you feel? Why?

Holiday Wednesday!

Hey everyone! Thanks so much for the feedback on my last post! :D One of my favorite things about blogging is being able to share information with others, and learn from everyone else in the blogging community!

Anyway, today is Children's Day here, and its considered a major holiday, so my sister doesn't have school, and the whole family is home for the day. We don't have much planned, but we're all excited about a chance to just hang out and relax! Especially the cats, since they obviously don't get enough sleep.

Well, anyway yesterday I tried out a brand new workout that I read on Lindsay's blog! I modified it a bit because I wanted a little more cardio, but here's what I ended up doing:

Cardio Circuit Workout

10 minute warm up (light-moderate cardio)
  • 20 stability ball push ups
  • 20 stability ball tucks
  • 20 squats w/ medium-heavy weight
  • 2 minute run
  • 10 straight leg raises
  • 20 cable curls
  • 2 minute run
I repeated the circuit 5 times and got about a 50 minute workout that killed! If anyone tries this out or makes any modifications, please let me know!!!! :D Thanks Lindsay for a great workout!!!!!!!

Why I Strength Train

Morning everyone!!!!! Not much happened this weekend, so I'm gonna talk a little bit about why I do strength training. First of all though, how was your weekend? There was an activity for the women of the community on Saturday, then a youth service, and yesterday, I did absolutely nothing.

So anyway, for the longest time, I avoided any sort of strength training because I was so scared of seeing the number on the scale go up, so I just did lots and lots of cardio. Well, when I joined the gym that I currently go to, my trainer sat down with me and planned out a strength routine consisting of several circuits that I could do together or separately, as long as I had at least 3 20 minute sessions of strength per week. And while yes, my weight might have gone up due to increase of lean muscle mass, I feel so much better than I ever did before strength training. I've noticed that not only am I stronger (duh...hahaha), but strength training has helped me do better in my cardio workouts as well!!!  Here's some more info that I found online about strength training:

    • Injury rates among runners are extremely high (at the high school level, cross-country runners experience more injuries than athletes in any other sport, including football and gymnastics).
    • One of the most effective means for minimizing tissue trauma associated with distance running is to develop stronger muscles, tendons, fascia, ligaments and bones. This is the primary reason that every runner should perform regular strength exercise.
    • Contributes to prevention of shin splits, stress fractures, lower back discomfort, knee problems and hip injuries common to distance runners.
  2. Performance enhancement:
    • Allows athlete to adhere to marathon training schedule and thereby maximize performance.
    • Improved muscle strength/endurance.
    • Improved joint flexibility.
    • Increased force/power production.
    • Improved running economy - research indicates 4 percent less oxygen used at sub-maximum running speeds.
    • Increased basal metabolic rate contributing to improved body composition.

Also, check this article out for info on why strength training is important for women.

Now, I just want to vent really quickly about a celebrity trainer with whom I strongly disagree, Tracy Anderson. According to her, women cannot lift anything heavier than 3 lb or do any repetitive exercise, which includes running. She says that this will build up too much muscle mass and make you bulky. In the article that I linked to above, it says the following about that:
"Many women are afraid of strength training because they believe that it will create large muscles that are unattractive. "I’ll weight train once I get this fat off.  I don’t want to turn it into muscle". This is a prevalent misconception. The vast majority of women cannot build large muscles because they are genetically incapable of doing so. It is impossible to turn fat into muscle, or muscle into fat, as each cell is unique from the other"
Another thing that I read about Tracy is that someone tried her diet and nearly passed out because she was working out several hours a day, and only eating about 700 calories. She lost weight, of course, but ended up feeling terrible. Basically, this method is enforcing anorexia and over-exercising in order to get results. As someone who has gone through both of those things, I can't understand why someone who is looked upon to help people become healthier endorses something like that. Recipe and Reviews

Heey!!!! Happy Friday!

My mom got in safely on Wednesday and we were all soooo happy to see her!!!!! She said that all of her flights went well and that her planes were mostly on time. She was really tired, but glad to be home. Funny story: while she was gone, dad wanted to get the couches reupholstered for her to surprise her when she got home. The real surprise is that when she got home, the couches hadn't been returned yet, so she walked in to an empty living room!

Soo yesterday morning I whipped up a batch of muffins so that mom wouldn't have to worry about breakfast. I based them off of my coconut lemon muffins, and made banana coconut muffins! Here my recipe:

Banana Coconut Muffins
Ingredients:
  • 1 1/4 cup flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 ripe bananas, mashed
  • 1 egg, slightly beaten, 
  • 1/2 cup butter, melted
  • 1/2 tsp vanilla extract
  • 2/3 cup sugar
  • 3/4 cup shredded coconut
Directions:
  1. In a small bowl, combine flour, salt, baking powder and cinnamon.
  2. In another bowl, combine bananas, egg, butter, vanilla and sugar. Add dry ingredients to wet. 
  3. Stir in about 1/2 cup of coconut.
  4. Lightly grease or line 8 muffin tins, and divide the batter between them. Sprinkle the remaining 1/4 cup of coconut on top of the muffins. Bake at 325 for about 25 minutes, or until done in the center. If you want, serve with a powdered sugar glaze. 
These muffins were super easy to throw together, and tasted good too!! They were even better today, because the banana flavor really had some time to get stronger. What is your favorite fruit to combine with coconut? I like banana-coconut, but I think that my all time favorite combo is pineapple coconut. Tastes like the beach! :D

One of the things my mom brought back was a gift bag from the awesome people over at Larabar!  I got several different flavors to try out, including the new chocolate chip cherry torte, which I'm going to review here!


I was sent four of these bars, and my entire family has tried them. According to the website, the ingredients are dates, chocolate chips, almonds, cherries, cashews, and sea salt. Here are our reviews:

Mom: Not a huge fan of cherries anyway, she just had a bite of my sister's bar. She was really surprised at how strong the flavors were in the bar, and said that if you do like cherry flavored things, than you'll probably like this. 

Sister: Tried it two different ways, straight out of the package, and slightly heated in the microwave. She said that the cherry flavor is strong both ways, but that when the bar isn't warm, the texture is a little bit crumbly and the chocolate flavor isn't in every bite. After heating it, she said that she loved the bar and it was a great snack! 

Dad: It's tasty! (believe me, he only says this when he means it. :P)

Me: I took my sister's advice and heated up my bar before eating it! Definitely the right decision to make!!!! :D This bar seriously tasted like dessert, but I knew that I was eating whole foods that are super nutritious at the same time!

Happy Day

Morning everyone!!!! Hope you all are having awesome weeks!!!!!!

I haven't mentioned this yet, but one of the reasons that I haven't been quite as active in the blogging community is because my mom has been in the states for 3 weeks now. She's coming back today, and we're all soooo excited! That's also one of the reasons that I've mentioned cooking dinner a lot more......and why I haven't been getting as many pictures. Anyway, mom's coming back and things will start getting back to what passes for normal around here. :D

Anyway last night for dinner I made something that I'd never attempted before......fried rice!! Funny thing is, its very easy to make, but for some reason I had always avoided making it. To go with it, I made some of my quick rolls and some chicken with honey-soy glaze on top. Pretty tasty! And now I have absolutely no inspiration whatsoever for tonight's dinner. hahaha

Anyway, in other news, I tried out a brand-new workout yesterday! Bob Harper's Ultimate Cardio Body!
















Wow! It is tough! I honestly don't think that I've done that many lunges in a while! :D Anyway, it was a really great workout, even if it did get a little repetitive. Heck, any workout that makes me as gross looking as this one did has to be good! :D

We're so Boring

Morning everyone!!!! Hope you all had wonderful weekends!!!! :D Mine was pretty quiet....we stayed at home and watched several movies: Shutter Island (creepy) and Remember Me (sad!) were two of them. Besides that, we went to church yesterday, and really just hung out. How was your weekend?


Thanks so much for the suggestions of what to do for dinner Friday! I ended up putting the steak in a spicy marinade, and searing it with some onions and bell peppers on top. I made some pasta and stewed potatoes to go with the meal. Tasty, but pretty simple, which was perfect for me! :D hahahaha

Honestly, not a whole lot is going on right now....we're so boring! I do pretty much the same thing every day....work out, study, mess with my cats, and eat...a lot! hahaha :D I'm actually just wrapping up my first quarter of school this week, and I absolutely can't believe how fast this year is going by! Pretty soon, I'm going to have to actually start looking at colleges, since next year is my last year of high school! It is hard though, because I won't actually be able to visit any schools, I'll have to rely on online tours and such. I'd have to say that college-wise, one of the things I'm most nervous about is choosing a school without ever actually setting foot on campus until the day I move in. I mean, I know that pretty much every school has virtual tours and such, but its just not the same.

She was actually asleep about 10 seconds before I took this! :D
